My vegan breakfast for today: Leftover Tofu Scramble.
It looks ugly, but it tastes wonderful. As my grandmother would say, waste not want not.
Seeing as most of the vegetables in my fridge were nearing their expiration date I decided to use
them all up today in this awesome scramble! Tomatoes, onion, zucchini, squash, corn, bell pepper,
avocado- all cut up and cooked in vegetable broth. Add some salt, pepper, cayenne, and garlic

powder, stir. Add brown rice and smashed up tofu, let simmer. Once the rice was done I added
some salsa, wrapped it up in a whole wheat tortilla and had a yummy breakfast burrito to go!
